Strawberry and White Chocolate Cookies
Preheat the oven to 180c, 160c Fan Gas Mark 4.
TOP TIP
Cream the butter and sugars until light and fluffy, whisk in the egg add the vanilla extract, diced strawberries, chocolate, mix in well and then add the flour and bicarbonate of soda.
Form a large ball and refrigerate for 30mins.
Line two large baking trays with parchment, divide the mix into 15 evenly sized balls flatten them and place half on each baking tray leaving space in between.
In the middle of each cookie add a dried strawberry.
Bake for 15/20 minutes or until golden.
Cool on a cooling rack.
Melt the white chocolate in a bowl over a pan of simmering water. Spoon into a piping bag and drizzle over each cookie. Allow to set for a few minutes.
