A superb homemade relish to use as an accompaniment with cold meat and salad or on sandwiches.

Step 1

Place the cucumbers, peppers, onions, chillies and garlic in a bowl. Add the salt and 200ml (7floz) of water and leave overnight in a cool place.

Step 2

Drain the vegetables well and place in a large pan with the vinegar, Tate & Lyle Light Soft Brown and spices.

Step 3

Bring to the boil and simmer for 10-15 minutes until the vegetables are tender.

Step 4

Blend the cornflour with a little water, add to the pan and cook until the relish has thickened.

Step 5

Transfer to hot, sterilised jars then seal, label and allow to cool. Ready to eat straight away.

Step 6

Store in a cool, dark place and chill once opened. Consume within six weeks.
