Why have a Bakewell Tart when you could have a whole tray!?

A classic Cherry Almond cake turned into a big, easy bake that everyone can have a slice of.

Cherry Almond cake

 

·200 g cherries

·175 g self-raising flour

·200 g flaked almonds

·200 g butter

·200 g Tate & Lyle Fair Trade Pure Cane Caster Sugar

·4 large eggs

·1 teaspoon vanilla extract

·2 lemons, zested

·2 teaspoons baking powder

·Pinch of salt

Instructions
  1. Set aside your cherries and almonds and add all of your other ingredients to a bowl. Beat these ingredients together until they resemble a batter consistency.​​​
  2. Then fold in your cherries and almonds. They should be as evenly distributed as possible throughout the mix.
  3. Preheat the oven to 180°C/ 160°C fan/ gas mark 4/ 350°F and bake for 30 mins.
  4. Pop onto a cooling rack and allow to fully cool before slicing and serving.
