This sumptuous chicken dish is a rich favourite ideal for a BBQ in the sunny British weather or a Sunday roast.
Preheat the oven to 200°C/400°F/Gas Mark 6.
Put all the marinade ingredients in a large plastic sandwich bag and add the chicken and the onion. Seal and leave to marinate in the fridge for at least one hour.
When you are ready to cook, tip the contents of the bag into a roasting dish and add the tomatoes. Bake in the oven for 20 minutes, then serve.
